Carrot, Apple & Thyme Cleanse Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 large carrots, diced
  • 2 apples, peeled and diced
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Add chopped onions and sauté until they become translucent.
  3. Stir in diced carrots and cook for about 5 minutes, stirring frequently.
  4. Add chopped apples and thyme, then sauté for another 3 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and let it simmer for 20 minutes, or until the carrots and apples are tender.
  7. Blend the soup using an immersion blender or in batches until smooth.
