Ingredients

  • 500 grams of potatoes
  • 200 grams of chorizo
  • 200 grams of kale
  • 2 tablespoons of olive oil
  • Salt, to taste
  • Pepper, to taste
  • Water, enough to cover potatoes

Instructions

  1. Begin by peeling and dicing the potatoes into small cubes, then set them aside.
  2. In a large pot, heat a drizzle of olive oil over medium heat.
  3. Add sliced chorizo to the pot and cook until lightly browned, about 5 minutes.
  4. Stir in the diced potatoes and pour in enough water to cover them by an inch.
  5. Bring the mixture to a boil, then reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
  6. Once cooked, use a masher to partially mash the potatoes for a creamier consistency.
  7. Add the chopped kale to the pot and cook for another 5-7 minutes until the kale is soft.
  8. Season the soup with salt and pepper to taste, then drizzle with additional olive oil before serving.
