Ingredients

  • 1 medium onion
  • 2 bell peppers (red and yellow)
  • 2 carrots
  • 1/2 head of cabbage
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 can diced tomatoes (400g)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Italian seasoning

Instructions

  1. Start by chopping 1 medium onion, 2 bell peppers (red and yellow), 2 carrots, and half a head of cabbage into bite-sized pieces.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and sauté until translucent.
  3. Add the bell peppers, carrots, and cabbage to the pot, stirring occasionally for about 5 minutes.
  4. Pour in 4 cups of vegetable broth and 1 can of diced tomatoes (400g) into the pot. Bring to a simmer.
  5. Add 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 tablespoon of Italian seasoning to the pot. Stir to combine.
  6. Let the soup simmer for about 25-30 minutes until all the vegetables are tender.
