Ingredients

  • 1 medium butternut squash
  • 1 medium onion
  • 2 medium apples
  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Pinch of nutmeg
  • Fresh thyme for garnish

Instructions

  1. Start by peeling and cubing 1 medium butternut squash and dicing 1 medium onion.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
