Ingredients

  • 500 grams of fish (catfish or similar)
  • 1000 milliliters of water
  • 2 stalks of lemongrass (smashed)
  • 2 pieces of ginger (sliced)
  • 4 cloves of garlic (crushed)
  • 200 grams of rice noodles
  • 3 tablespoons of fish sauce
  • 1 teaspoon turmeric powder
  • Salt to taste
  • For crispy fritters: 100 grams of chickpea flour
  • Boiled eggs (2, for garnishing)
  • Fresh cilantro for garnish
  • Lime wedges (for serving)
  • Chili flakes (to taste)

Instructions

  1. Prepare the fish broth by simmering fish with water, lemongrass, ginger, and garlic for 30 minutes.
  2. Remove the fish, flake it into pieces, and strain the broth to remove solids.
  3. Cook rice noodles according to package instructions and set aside.
  4. Return the strained broth to heat, adding fish sauce, turmeric, and salt to taste.
  5. In a separate pan, fry ingredients for crispy fritters until golden brown.
  6. Slice boiled eggs in half for garnishing.
  7. To serve, place rice noodles in a bowl, pour hot broth over them, and add fish pieces.
  8. Top with crispy fritters, boiled eggs, fresh cilantro, and a squeeze of lime.
  9. Add chili flakes as desired for an extra kick.
