Ingredients

  • 200 grams broccoli
  • 100 grams spinach
  • 500 milliliters water
  • 1 tablespoon olive oil
  • Juice of half a lemon
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Begin by washing the broccoli and spinach thoroughly under running water.
  2. Chop the broccoli into florets and set aside.
  3. In a pot, bring 500ml of water to a boil.
  4. Add the broccoli and cook for about 5-7 minutes until tender.
  5. Add the spinach to the pot and cook for an additional 2 minutes.
  6. Remove the pot from the heat and let it cool slightly.
  7. Using an immersion blender, purée the mixture until smooth.
  8. Stir in the juice of half a lemon and a drizzle of olive oil.
  9. Season with salt and pepper to taste.
  10. Serve warm, garnishing with additional olive oil drizzle if desired.
