Tangy Broccoli & Lemon Yogurt Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 400 grams broccoli, chopped
  • 750 milliliters vegetable broth
  • Juice of 1 lemon
  • 200 grams Greek yogurt
  • Salt and pepper to taste
  • Grated lemon zest for garnish

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat.
  2. Add chopped onion and garlic, sautéing until softened.
  3. Stir in chopped broccoli, then add vegetable broth and bring to a boil.
  4. Reduce heat and simmer until the broccoli is tender, about 10-15 minutes.
  5. Remove from heat and use an immersion blender to puree the soup until smooth.
