Creamy Broccoli & Cauliflower Soup: A Nutritious Delight

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 500 grams broccoli, chopped
  • 500 grams cauliflower, chopped
  • 1 liter vegetable broth
  • 200 milliliters heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, add 1 tablespoon of olive oil and heat over medium heat.
  2. Add 1 chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add 500 grams of chopped broccoli and 500 grams of chopped cauliflower to the pot.
  5. Pour in 1 liter of vegetable broth and bring to a boil.
  6. Reduce heat, cover, and let simmer for 15 minutes until the vegetables are tender.
  7. Remove pot from heat and blend the soup until smooth using an immersion blender.
  8. Stir in 200 milliliters of heavy cream and season with salt and pepper to taste.
  9. Garnish with roasted broccoli and cauliflower florets before serving.
