Ingredients

  • 2 cups black beans
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Zest and juice of 2 oranges
  • Fresh cilantro for garnish
  • Orange slices for garnish

Instructions

  1. Begin by soaking 2 cups of black beans overnight in water, then drain and rinse them.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add 1 chopped onion and sauté until translucent.
  4. Stir in 2 minced garlic cloves and cook for another minute.
  5. Add the soaked black beans to the pot, along with 4 cups of vegetable broth.
  6. Incorporate 1 teaspoon of smoked paprika, 1 teaspoon of cumin, and salt and pepper to taste.
  7. Bring the mixture to a boil, then reduce heat and simmer for approximately 1 hour or until beans are tender.
  8. Once cooked, stir in the zest and juice of 2 oranges and let it simmer for an additional 10 minutes.
