Ingredients

  • 1 kg beef short ribs
  • 300 g wild mushrooms
  • 200 g pearl onions
  • 500 ml red wine
  • 750 ml beef broth
  • 2 tbsp olive oil
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium-high heat and add a splash of oil.
  2. Season the short ribs with salt and pepper, then sear them in the pot until browned on all sides.
  3. Remove the ribs and set aside; add the pearl onions and sauté until golden.
  4. Stir in the wild mushrooms and cook until they've released their moisture.
  5. Deglaze the pot with red wine, scraping any browned bits off the bottom.
  6. Add the short ribs back into the pot, followed by beef broth to cover.
  7. Add fresh herbs like rosemary and thyme for added flavor.
  8. Bring to a boil, then reduce heat to low, cover, and simmer for 2-3 hours until ribs are tender.
