Braised Oxtail & Butter Bean Stew

Ingredients

  • 1 kg oxtail
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 500 ml red wine
  • 1 liter beef broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 400 g butter beans, drained and rinsed
  • Salt and pepper to taste
  • Fresh rosemary for garnish

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. Season the oxtail pieces generously with salt and pepper.
  3. In a large, oven-safe pot or Dutch oven, heat oil over medium-high heat. Add the oxtail and brown on all sides, about 5-7 minutes.
  4. Remove oxtail and set aside. In the same pot, sauté chopped onions, carrots, and celery until soft, about 5 minutes.
  5. Add minced garlic, cook for an additional minute until fragrant.
  6. Pour in red wine and scrape up any browned bits from the bottom of the pot. Allow to simmer for 5 minutes.
  7. Add beef broth, thyme, and bay leaves to the pot.
  8. Return the oxtail to the pot, covering it with the broth mixture.
  9. Add butter beans and bring to a simmer.
  10. Cover the pot and transfer it to the preheated oven. Braise for 3 hours, or until the oxtail is tender and pulls away from the bone.
  11. Once cooked, adjust seasoning with salt and pepper. Serve hot, garnished with fresh rosemary.
