Vibrant Beet & Ginger Cleansing Soup

Ingredients

  • 500 grams of beetroot
  • 1 thumb-sized piece of ginger
  • 1 onion
  • 2 garlic cloves
  • 4 cups of vegetable broth
  • 1 apple
  • 1 tablespoon of olive oil
  • Salt to taste
  • Pepper to taste
  • Yogurt for garnish (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Start by peeling and chopping the beetroots into small chunks.
  2. Grate a thumb-sized piece of fresh ginger and set aside.
  3. In a large pot, heat a tablespoon of olive oil over medium heat.
  4. Add chopped beetroots and grated ginger to the pot, stirring occasionally.
  5. Include 1 chopped onion and 2 minced garlic cloves, cooking until softened.
  6. Pour in 4 cups of vegetable broth and bring to a boil.
  7. Add 1 chopped apple to the mixture, and reduce heat to a simmer.
  8. Cook for about 20 minutes, or until the beetroots are tender.
  9. Using an immersion blender, blend the soup until smooth and creamy.
  10. Season with salt and pepper to taste.
  11. Serve hot with a swirl of yogurt and fresh herbs on top.
