Ingredients

  • 4 ripe pears, peeled, cored, and diced
  • 1 cup toasted walnuts, roughly chopped
  • 1 medium onion, diced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Start by toasting walnuts in a pan over medium heat until golden brown and fragrant, then set aside.
  2. In a large pot, melt butter over medium heat. Add diced onions and cook until soft.
  3. Add chopped pears to the pot and cook for about 5 minutes until fruit begins to soften.
  4. Pour in vegetable broth and bring the mixture to a boil. Reduce heat and let simmer for 15 minutes.
  5. Using an immersion blender, blend the soup until smooth and creamy.
  6. Stir in heavy cream, season with salt and pepper. Cook for an additional 5 minutes.
