Autumn Pear & Parsnip Soup

Ingredients

  • 2 medium parsnips
  • 2 ripe pears
  • 2 tablespoons butter
  • 1 teaspoon ground cinnamon
  • Salt
  • Pepper
  • 4 cups vegetable broth
  • Toasted nuts or fresh herbs for garnish

Instructions

  1. Peel and dice 2 medium-sized parsnips and 2 ripe pears.
  2. In a pot, melt 2 tablespoons of butter over medium heat.
  3. Add the diced parsnips and pears to the pot; sauté for about 5 minutes until softened.
  4. Stir in 1 teaspoon of ground cinnamon along with salt and pepper to taste.
  5. Pour in 4 cups of vegetable broth and bring to a boil.
  6. Reduce heat; let simmer for 20 minutes until the parsnips are tender.
  7. Use an immersion blender to puree the soup until smooth.
