Ingredients

  • 500g roasted chestnuts
  • 2 apples, chopped
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • 2 teaspoons fresh thyme
  • 1 liter vegetable broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Spread the chestnuts on a baking sheet and roast for 20-25 minutes until the shells are split.
  3. While chestnuts are roasting, chop the apples and onions.
  4. In a large pot, heat olive oil over medium heat, add chopped onions, and sauté until translucent.
  5. Add apples and thyme, cooking for another 5 minutes until apples begin to soften.
  6. Remove roasted chestnuts from the oven, allow them to cool slightly, then peel and chop them.
  7. Add the chopped chestnuts to the pot, then pour in vegetable broth.
  8. Bring the mixture to a boil, then reduce heat to simmer for about 15 minutes.
  9. Use an immersion blender to purée the soup until smooth, adjusting with additional broth as needed.
  10. Season with salt and pepper to taste and garnish with fresh thyme before serving.
