Ingredients

  • 2 medium beets, roasted
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons balsamic vinegar
  • Salt, to taste
  • Fresh mint leaves, for garnish
  • Water, as needed for blending

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Wrap the beets in aluminum foil and roast in the oven for about 45-60 minutes until tender.
  3. Once cool, peel the beets and chop them into chunks.
  4. In a blender, combine the roasted beets, mixed berries, balsamic vinegar, and a pinch of salt.
  5. Blend until smooth, adding water as needed to reach your desired consistency.
