Ingredients

  • 1 turkey carcass
  • 4-5 liters water
  • 2-3 leftover carrots, chopped
  • 2-3 leftover celery stalks, chopped
  • 1-2 leftover onions, chopped
  • 2-3 sprigs fresh thyme
  • A handful of fresh parsley
  • Salt and pepper to taste
  • 1-2 cups diced leftover turkey meat
  • Any additional vegetables like squash or potatoes

Instructions

  1. Start by placing the turkey carcass in a large pot and cover it with water (about 4-5 liters).
  2. Add chopped leftover vegetables such as carrots, celery, and onions to the pot.
  3. Add fresh herbs like thyme and parsley for flavor.
  4. Season with salt and pepper to taste.
  5. Bring to a boil over high heat, then reduce to a simmer.
  6. Let it simmer for 2-3 hours to extract all the flavors.
  7. Strain the broth into another pot, discarding the bones and solids.
