Ingredients

  • 1 medium delicata squash
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 750ml vegetable broth
  • 250ml apple cider
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Toasted pepitas for garnish
  • Fresh herbs (e.g., sage, thyme) for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Slice the delicata squash in half and remove the seeds.
  3. Brush the inner sides with olive oil and season with salt and pepper.
  4. Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
  5. While the squash is roasting, heat a pot over medium heat and add olive oil.
