Roasted Beet & Horseradish Soup

Ingredients

  • 500 grams of beets
  • 1 tablespoon of horseradish
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Coconut yogurt for serving
  • Fresh dill for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Wash and peel the beets, then cut them into cubes.
  3. Toss the beet cubes with olive oil, salt, and pepper.
  4. Spread the beets on a baking sheet and roast for 30-35 minutes until tender.
