Ingredients

  • 1.5 kg beef short ribs
  • 150 g bacon, diced
  • 250 g pearl onions, peeled
  • 250 g mushrooms, sliced
  • 750 ml red wine
  • 500 ml beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. In a large heavy pot, cook diced bacon until crispy. Remove and set aside.
  3. In the same pot, brown the short ribs on all sides. Remove and set aside.
  4. Add pearl onions and mushrooms to the pot, sautéing until golden.
  5. Return the bacon and short ribs to the pot.
  6. Add red wine, beef broth, thyme, and bay leaves.
  7. Bring to a simmer, then cover and transfer to the oven.
  8. Braise for about 2.5 to 3 hours, or until the meat is tender.
  9. Remove from the oven, and let it cool slightly before serving with fresh herbs.
