Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup frozen mixed vegetables
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • Fresh parsley for garnish

Instructions

  1. Start by heating a large pot over medium heat. Add 1 tablespoon of olive oil and sauté 1 diced onion until translucent, about 3 minutes.
  2. Add 2 cloves minced garlic, 2 diced carrots, and 2 diced celery stalks. Cook for another 5 minutes until vegetables begin to soften.
  3. Pour in 4 cups of chicken broth and bring to a gentle boil.
  4. Stir in 2 cups of shredded cooked chicken and 1 cup of frozen mixed vegetables. Season with salt and pepper to taste.
