Pork Belly & Black Lentil Stew

Ingredients

  • 500g pork belly
  • 200g black lentils
  • 2 medium carrots, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 750ml vegetable broth
  • Salt and pepper to taste
  • Balsamic reduction for drizzling
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Season the pork belly with salt and pepper. Sear it in a hot skillet until crispy on all sides.
  3. Transfer the pork belly to the oven and roast for about 45 minutes, or until fully cooked.
  4. In a separate pot, sauté onions and garlic until fragrant.
  5. Add chopped carrots to the pot and cook until slightly softened.
  6. Stir in black lentils and vegetable broth; bring to a boil.
  7. Reduce heat and simmer until lentils are tender, about 20-25 minutes.
  8. Once the pork belly is done, let it rest before slicing.
  9. To serve, place lentil stew in a bowl, top with sliced pork belly, and drizzle balsamic reduction.
  10. Garnish with fresh herbs if desired.
