Beef Goulash with Spaetzle

Ingredients

  • 1 kg beef cubes
  • 2 tablespoons cooking oil
  • 1 chopped onion
  • 2 minced garlic cloves
  • 2 tablespoons Hungarian paprika
  • 1 can (400g) diced tomatoes
  • 4 cups beef broth
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 3 eggs
  • ½ cup milk
  • Sour cream for serving
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat 2 tablespoons of oil over medium heat. Add 1 kg of beef cubes and brown on all sides.
  2. Remove the beef and set it aside. In the same pot, add 1 chopped onion, 2 minced garlic cloves, and sauté until softened.
  3. Stir in 2 tablespoons of Hungarian paprika, followed by 1 can (400g) of diced tomatoes, and return the beef to the pot.
  4. Add 4 cups of beef broth and season with salt and pepper. Bring the mixture to a boil and then reduce to a simmer.
  5. Cover and let it cook for about 1.5 to 2 hours, or until the beef is tender.
  6. While the goulash simmers, prepare the spaetzle by mixing 2 cups of all-purpose flour, 3 eggs, and ½ cup of milk until smooth.
  7. Boil water in a large pot and use a spaetzle maker or colander to drop the batter into the boiling water. Cook until they float, about 2-3 minutes.
  8. Remove the spaetzle with a slotted spoon and set aside. Once the goulash is ready, taste and adjust seasoning as necessary.
  9. Serve the beef goulash over the spaetzle and garnish with sour cream and parsley.
