Ingredients

  • 500g Swiss chard
  • 400g canned white beans, drained
  • 3 cloves garlic, minced
  • 1L vegetable broth
  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • Salt and pepper, to taste
  • Fresh mint leaves for garnish

Instructions

  1. Start by rinsing and chopping the rainbow chard into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add the chopped Swiss chard and cook for about 4-5 minutes until wilted.
  4. Introduce white beans and vegetable broth into the pot, stirring to combine.
  5. Bring the mixture to a boil, then reduce to a simmer for 15-20 minutes.
  6. Before serving, add lemon zest and season with salt and pepper to taste.
