Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 500g lamb, cut into cubes
  • 2 teaspoons ras el hanout spice blend
  • 400g canned diced tomatoes
  • 1 liter chicken stock
  • 200g chickpeas, drained and rinsed
  • 100g cracked green wheat
  • Salt to taste
  • Fresh mint leaves for garnish
  • Lime wedges for serving

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté diced onions until translucent.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Introduce cubed lamb and brown on all sides.
  4. Sprinkle in ras el hanout spices and mix well to coat the meat.
  5. Pour in the diced tomatoes and chicken stock; bring to a boil.
  6. Add the chickpeas, cracked green wheat, and salt. Reduce heat and simmer for 25-30 minutes.
