Ingredients

  • 500 g chicken drumsticks or beef chunks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 medium pumpkin, peeled and cubed
  • 1 cup corn, cut off the cob
  • 2 medium potatoes, peeled and cubed
  • 1 cup uncooked rice
  • 6 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chicken or beef, browning on all sides for about 5-7 minutes.
  3. Stir in chopped onions, garlic, and cook until softened.
