Ingredients

  • 1 whole chicken (about 1 kg)
  • 200 grams rice vermicelli
  • 2 tablespoons vegetable oil
  • 3 shallots, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons turmeric powder
  • 2 stalks lemongrass, bruised
  • 2 hard-boiled eggs, sliced
  • 50 grams fried shallots
  • Fresh coriander leaves for garnish
  • Lime wedges for serving

Instructions

  1. Begin by preparing the chicken. Boil it in a pot with water until fully cooked. Retain the broth for the soup.
  2. Once the chicken is cooked, remove it from the pot, shred it into pieces, and set aside.
  3. In a separate pan, heat oil and sauté chopped shallots and garlic until fragrant.
  4. Add turmeric and lemongrass to the pan, stirring well to combine.
  5. Pour in the reserved chicken broth and bring the mixture to a simmer.
  6. Add the shredded chicken back into the pot, allowing it to soak in the flavors for about 10 minutes.
