Ingredients

  • 250g fresh clams
  • 200g sweet corn
  • 150g bacon
  • 300g potatoes, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 750ml chicken or vegetable broth
  • 300ml heavy cream
  • Salt and pepper, to taste
  • Chopped chives for garnish

Instructions

  1. In a large pot, cook the bacon until crispy. Remove and set aside.
  2. In the same pot, add minced onions and garlic; sauté until soft.
  3. Add diced potatoes and clams with their juice; stir well.
  4. Pour in chicken or vegetable broth; bring to a boil.
  5. Lower the heat and let it simmer for about 15 minutes or until potatoes are tender.
  6. Add sweet corn and heavy cream; stir until well combined.
  7. Season with salt and pepper to taste, and sprinkle in the cooked bacon.
