Beef & Parsnip Shepherd’s Stew

Ingredients

  • 500g beef, diced
  • 2 medium parsnips, diced
  • 1 large celery root, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 1L beef broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 large potatoes, for mashing
  • Butter for mashed potatoes
  • Milk for mashed potatoes
  • Fresh herbs (rosemary, thyme, etc.)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced beef and brown on all sides, about 5 minutes.
  2. Add diced onions, garlic, and celery root to the pot; cook until onions are translucent.
  3. Stir in diced parsnips, carrots, and herbs, followed by the beef broth. Bring to a simmer.
  4. Season with salt and pepper to taste; cover and let simmer for about 1 hour until beef is tender.
  5. While the stew simmers, prepare mashed potatoes by boiling peeled and cubed potatoes until tender. Drain and mash with butter, milk, salt, and pepper.
  6. Once the beef is tender, serve the stew in bowls topped with a generous scoop of mashed potatoes.
