Ingredients

  • 1 medium butternut squash (about 800g)
  • 4 tablespoons unsalted butter (60g)
  • 2 shallots, finely chopped
  • 5-6 fresh sage leaves
  • 1/4 teaspoon ground nutmeg
  • 3 cups vegetable broth (720ml)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Cut the butternut squash in half, scoop out the seeds, and place it cut-side down on a baking sheet.
  3. Roast for about 30-35 minutes until tender.
