Ingredients

  • 500g ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 400g canned diced tomatoes
  • 400g canned kidney beans, drained and rinsed
  • 600ml beef broth
  • 2 potatoes, diced
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • 200g shredded cheese
  • Bacon, cooked and crumbled (for topping)
  • Sour cream (for topping)
  • Green onions, sliced (for topping)
  • Jalapeños, sliced (for topping)

Instructions

  1. In a large pot, brown 500g of ground beef over medium heat until cooked through, then drain excess fat.
  2. Add 1 diced onion and 2 cloves minced garlic to the pot, sautéing until softened.
  3. Stir in 400g of canned diced tomatoes, 400g of kidney beans (drained and rinsed), and 600ml of beef broth.
  4. Add 2 diced potatoes, 1 tablespoon chili powder, and salt and pepper to taste. Bring to a boil.
  5. Reduce the heat and let it simmer for about 20 minutes, until the potatoes are tender.
  6. Stir in 200g of shredded cheese until melted and combined.
  7. Serve the soup in bowls, topped with bacon, sour cream, green onions, and jalapeños.
