Comforting St. Patrick’s Day Cabbage & Bacon Soup

Ingredients

  • 200g diced bacon
  • 1 large onion, chopped
  • 500g cabbage, chopped
  • 400g potatoes, diced
  • 1 liter chicken broth
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add chopped onion and cook until translucent and soft.
  3. Stir in the chopped cabbage and continue to cook for about 5 minutes until wilted.
  4. Add diced potatoes, broth, and season with salt and pepper. Bring to a boil.
  5. Reduce heat to a simmer and cook for about 20 minutes, or until the potatoes are tender.
  6. Add the cooked bacon back into the pot and stir to combine. Adjust seasoning if necessary.
