Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 can (400 grams) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Corn tortillas
  • Avocado, sliced
  • Lime, wedges
  • Fresh cilantro
  • 100 grams queso fresco, crumbled

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add 1 chopped onion and sauté until translucent.
  3. Add 3 minced garlic cloves and 1 teaspoon of cumin, sauté for another minute.
  4. Stir in 1 can (400 grams) of diced tomatoes and 4 cups of vegetable broth.
  5. Add 1 teaspoon of chili powder and season with salt and pepper to taste.
  6. Let the mixture simmer for 15-20 minutes.
  7. In the meantime, fry or bake corn tortillas until crispy, then cut them into strips.
  8. Serve the soup hot, topped with avocado slices, lime wedges, cilantro, tortilla strips, and 100 grams of crumbled queso fresco.
