Ingredients

  • 4 large onions
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • Salt to taste
  • Pepper to taste
  • Fresh thyme
  • 4 slices of bread
  • 1 cup vegan cheese

Instructions

  1. Begin by slicing the onions thinly. Heat a large pot over medium heat and add a couple of tablespoons of olive oil.
  2. Add the sliced onions to the pot and sauté gently, stirring frequently, until they become soft and caramelized, about 20-30 minutes.
  3. Once the onions are caramelized, add minced garlic and cook for an additional minute.
  4. Pour in vegetable broth and bring to a simmer. Season with salt, pepper, and thyme. Let simmer for 10-15 minutes to blend flavors.
