Ingredients

  • 4 medium-sized potatoes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup unsweetened plant-based milk
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon smoked paprika
  • Vegan cheese, for topping
  • Plant-based bacon bits, for topping
  • Vegan sour cream, for topping
  • Chives, chopped, for garnish

Instructions

  1. Begin by washing and peeling 4 medium-sized potatoes. Chop them into small cubes.
