Hearty Beef & Cheese Enchilada Stew

Ingredients

  • 500g ground beef
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 400g black beans, drained and rinsed
  • 400g diced tomatoes
  • 250ml beef broth
  • 100g enchilada sauce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt, to taste
  • Pepper, to taste
  • 100g cheese sauce
  • Crispy tortilla strips, for topping
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, brown 500g of ground beef over medium heat until fully cooked, about 5-7 minutes.
  2. Add 1 diced onion, 2 minced garlic cloves, and cook until the onion is translucent.
  3. Stir in 400g of black beans, 400g of diced tomatoes, 250ml of beef broth, and 100g of enchilada sauce.
  4. Season with 1 teaspoon of cumin, 1 teaspoon of chili powder, salt, and pepper to taste.
  5. Let the mixture simmer for 15 minutes to absorb all the flavors.
  6. While simmering, prepare 100g of cheese sauce and set aside.
  7. Serve the stew hot, topping each bowl with cheese sauce, crispy tortilla strips, and fresh cilantro.
  8. Add a lime wedge on the side for squeezing over the stew just before eating.
