Bacon Cheeseburger Macaroni Soup

Ingredients

  • 200g bacon
  • 300g ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 400g diced tomatoes
  • 150g elbow macaroni
  • 200g cheddar cheese, shredded
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • Fresh tomatoes and jalapeños for topping

Instructions

  1. In a large pot, cook the bacon until crispy. Remove and chop, keeping the fat in the pot.
  2. Add ground beef to the pot, cooking until browned. Drain excess fat if needed.
  3. Stir in diced onions and garlic, cooking until softened.
  4. Add broth, diced tomatoes, and seasonings, bringing to a simmer.
  5. Stir in macaroni and let it cook until tender, approximately 6-8 minutes.
