Vitamin C Citrus Chicken Soup

Ingredients

  • 500g chicken breast
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 liter chicken broth
  • Juice of 2 oranges
  • Juice of 1 lemon
  • Zest of 1 orange
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Fresh herbs (mint, parsley) for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté diced onions and garlic until translucent.
  2. Add chicken breasts and cook until lightly browned on both sides.
  3. Stir in bell peppers and cook for another 3-4 minutes.
  4. Pour in chicken broth and bring to a simmer.
  5. Add orange juice, lemon juice, and zests.
  6. Season with salt and pepper, adjusting to taste.
  7. Add orange slices and cook for an additional 15-20 minutes, until chicken is thoroughly cooked.
  8. Remove chicken, shred it, and return to the pot. Stir in fresh herbs.
  9. Serve hot, garnished with additional citrus sections.
