Probiotic Kimchi & Tofu Soup

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 cup mushrooms, chopped
  • 1 cup kimchi, chopped
  • 4 cups vegetable broth
  • 300g silken tofu, cut into cubes
  • 1/4 cup green onions, chopped

Instructions

  1. Heat a pot over medium heat and add a tablespoon of olive oil.
  2. Add minced garlic (2 cloves) and ginger (1-inch piece, grated) to the pot and sauté for about a minute until fragrant.
  3. Add 1 cup of chopped mushrooms and sauté for another 3-4 minutes.
  4. Incorporate 1 cup of kimchi and stir well. Cook for another 2 minutes.
  5. Pour in 4 cups of vegetable broth and bring to a boil.
  6. Reduce the heat and add 300g of silken tofu (cut into cubes) gently into the soup.
  7. Simmer for 5-7 minutes, allowing flavors to meld.
  8. Garnish with chopped green onions (1/4 cup) before serving hot.
