Authentic Nigerian Egusi Soup

Ingredients

  • 2 cups egusi (melon seeds)
  • 2 tablespoons palm oil
  • 1 large onion, diced
  • 4 cups beef broth or water
  • 500 grams diced beef (or fish)
  • Salt to taste
  • Black pepper to taste
  • 2 cups chopped spinach
  • 1 cup cherry tomatoes, halved

Instructions

  1. Begin by blending 2 cups of egusi (melon seeds) with water to form a smooth paste.
  2. Heat 2 tablespoons of palm oil in a pot over medium heat.
  3. Add diced onions and sauté until translucent.
  4. Add the blended egusi paste to the pot and cook for about 10 minutes, stirring occasionally.
  5. Pour in 4 cups of beef broth or water, mixing well.
  6. Add 500 grams of diced beef (or your choice of fish), along with salt, pepper, and seasonings.
  7. Let the mixture simmer until the beef is tender, about 30-40 minutes.
  8. In the last 10 minutes of cooking, add 2 cups of chopped spinach and halved cherry tomatoes.
  9. Adjust seasoning to taste and serve hot with fufu or rice.
