Ingredients

  • 500g yellow split peas
  • 200g diced pork (ham or pork belly)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 1.5 liters water
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Rinse 500g of yellow split peas under cold water and soak them overnight.
  2. In a large pot, add 200g of diced pork (such as ham or pork belly) and sauté until golden brown.
  3. Add 1 chopped onion, 2 minced garlic cloves, and 2 diced carrots; sauté until the onions are translucent.
  4. Drain the soaked peas and add them to the pot along with 1.5 liters of water.
  5. Add 1 teaspoon of dried thyme, 2 bay leaves, and season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1-1.5 hours, or until the peas are soft.
  7. Remove the bay leaves and either blend a portion of the soup for a creamy texture or leave it chunky.
  8. Check seasoning and adjust salt and pepper as needed before serving.
