Hearty Portuguese Caldo de Castanhas

Ingredients

  • 200g dried white beans
  • 200g chorizo, sliced
  • 300g cooked chestnuts
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 1.5 liters water
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon smoked paprika
  • Fresh parsley for garnish

Instructions

  1. Begin by soaking 200g of dried white beans overnight in water.
  2. Drain and rinse the beans, then place them in a pot with 1.5 liters of fresh water and bring to a boil.
  3. Add 200g of sliced chorizo and simmer for about 30 minutes until the beans are tender.
  4. In a separate pan, sauté 1 chopped onion and 2 minced garlic cloves until translucent.
  5. Add 300g of cooked chestnuts and stir for 2-3 minutes.
  6. Incorporate the sautéed mixture into the pot with beans and chorizo.
  7. Season with salt, pepper, and 1 teaspoon of smoked paprika.
  8. Simmer for an additional 15 minutes, allowing flavors to meld.
  9. Adjust seasoning and serve hot, garnished with fresh parsley.
