Ingredients

  • 30g butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 300g corned beef, chopped
  • 200g sauerkraut, drained
  • 1 liter chicken broth
  • 200ml heavy cream
  • 100g Russian dressing
  • 150g Swiss cheese, shredded
  • 4 slices rye bread
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook diced onions and garlic in butter over medium heat until tender.
  2. Add chopped corned beef and sauté for a few minutes until heated through.
  3. Stir in sauerkraut and cook for another 3-4 minutes.
  4. Pour in chicken broth and bring to a simmer.
  5. In a bowl, mix together the cream, Russian dressing, and Swiss cheese until smooth, then stir into the pot.
  6. Season to taste with salt and pepper and simmer for an additional 10 minutes.
  7. Meanwhile, prepare rye bread croutons by toasting slices in the oven until golden brown.
