Ingredients

  • 1 lb (450 g) chicken breast, diced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 4 cups (1 L) chicken broth
  • 1 can (14.5 oz / 400 g) diced tomatoes
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup (150 g) corn kernels
  • Juice of 2 limes
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and cook until translucent.
  2. Add diced bell peppers and cook for another 3-4 minutes until they soften.
  3. Stir in the seasoned chicken pieces and cook until browned on all sides.
  4. Pour in the chicken broth and bring to a boil.
  5. Add canned diced tomatoes, black beans, corn, lime juice, and any additional spices you prefer.
