Ingredients

  • 2 tablespoons olive oil
  • 2 stalks celery, chopped
  • 1 can (5 oz) tuna, drained
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 1 cup frozen peas
  • 1 can (10.5 oz) cream of mushroom soup
  • Salt and pepper to taste
  • Crushed crackers or breadcrumbs for garnish

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Add chopped celery and sauté until tender, about 3-4 minutes.
  3. Stir in the canned tuna and cook for another 2 minutes.
  4. Pour in 4 cups of chicken broth and bring to a boil.
  5. Once boiling, add the egg noodles and cook according to package instructions, usually around 8 minutes.
  6. Add frozen peas and continue to cook for another 2-3 minutes until heated through.
  7. Stir in cream of mushroom soup and mix until well combined.
  8. Season with salt and pepper to taste.
