Ingredients

  • 300g pork, diced
  • 200g cabbage, chopped
  • 1 cup black-eyed peas, cooked
  • 4 cups chicken or vegetable broth
  • 100g greens (spinach or kale)
  • Salt and pepper, to taste
  • 1 tablespoon oil for sautéing
  • Green onions, for garnish
  • Nuts, for garnish (optional)

Instructions

  1. In a large pot, heat 1 tablespoon of oil over medium heat.
  2. Add diced pork and cook until browned, about 5-7 minutes.
  3. Stir in chopped cabbage and cook for another 5 minutes until slightly wilted.
  4. Pour in 4 cups of broth and bring to a boil.
  5. Add black-eyed peas, season with salt and pepper, and reduce heat to simmer for 30 minutes.
  6. In the final minutes, stir in chopped greens and cook until tender.
  7. Serve hot, garnished with green onions and a sprinkle of nuts if desired.
