Ingredients

  • 4 large red bell peppers
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste
  • Bread for croutons

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Slice red bell peppers in half and remove the seeds, then place them cut-side down on a baking sheet.
  3. Roast the peppers for 25-30 minutes until they are charred and tender.
  4. Once roasted, transfer the peppers to a bowl, cover with plastic wrap, and let them steam for 10 minutes.
  5. After steaming, peel off the skins and chop the peppers.
  6. In a large pot, heat olive oil over medium heat and sauté chopped onions and garlic until softened.
  7. Add in the chopped roasted peppers and vegetable broth, then bring to a boil.
  8. Reduce the heat and simmer for about 15 minutes for flavors to meld.
