Ingredients

  • 2 cups shredded turkey
  • 4 cups chicken or turkey broth
  • 1 cup cranberries
  • 1 cup stuffing
  • 1 cup diced onions
  • 1 cup chopped carrots
  • 1 cup diced celery
  • 2 cups diced potatoes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh herbs (thyme or rosemary)

Instructions

  1. Start by heating a large pot over medium heat and adding a tablespoon of olive oil.
  2. Once the oil is hot, add 1 cup diced onions and sauté until translucent, about 5 minutes.
  3. Add 1 cup chopped carrots and 1 cup diced celery, stirring occasionally for another 5 minutes.
  4. Incorporate 2 cups of shredded turkey into the pot and mix well.
  5. Add 4 cups chicken or turkey broth and bring to a gentle simmer.
  6. Stir in 1 cup of cranberries, 1 cup of stuffing, and any leftover gravy you may have, letting it simmer for about 10-15 minutes.
  7. Season with salt, pepper, and your choice of herbs, such as thyme or rosemary.
  8. Add in 2 cups of diced potatoes and simmer until the potatoes are tender, about 10 minutes.
  9. Once cooked, taste and adjust the seasoning as needed and serve hot, garnished with fresh herbs.
  10. Optional: For a thicker soup, puree a portion of the soup and stir it back into the pot.
