Ingredients

  • 1 medium pumpkin (approximately 1 kg)
  • 1 can (400g) black beans, rinsed and drained
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 500 ml vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Pumpkin seeds, for garnish
  • Yogurt, for garnish (optional)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Cut a pumpkin in half, deseed, and place it cut side down on a baking sheet. Roast for 25-30 minutes until tender.
  3. In a pot, heat olive oil over medium heat. Add chopped onions and garlic, cooking until translucent.
  4. Add cumin, coriander, salt, and pepper to the onion mixture, stirring for 1-2 minutes.
  5. Once the pumpkin is roasted, scoop out the flesh and add it to the pot. Stir to combine.
  6. Pour in vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.
  7. Use an immersion blender or regular blender to puree the soup until smooth.
  8. Stir in black beans and heat until warmed through. Adjust seasoning as needed.
