Ingredients

  • 4 cups vegetable broth
  • 3 tablespoons miso paste
  • 200g shiitake mushrooms, sliced
  • 200g firm tofu, cubed
  • 150g bok choy, sliced
  • 200g ramen noodles
  • 2 green onions, sliced
  • nori sheets (optional)
  • sesame seeds (optional)
  • soft-boiled eggs (optional)

Instructions

  1. Start by preparing the miso broth. In a large pot, combine 4 cups of vegetable broth and bring it to a simmer.
  2. Add 3 tablespoons of miso paste to the broth, stirring until dissolved.
  3. Add 200g of shiitake mushrooms, sliced, and simmer for about 10 minutes.
  4. In a separate pot, cook 200g of ramen noodles according to package instructions. Drain and set aside.
  5. To the broth, add 200g of firm tofu, cubed, and 150g of sliced bok choy. Cook for an additional 5 minutes.
  6. Prepare soft-boiled eggs if not vegan: boil for 6-7 minutes, cool in ice water, peel, and set aside.
  7. To serve, divide the cooked ramen noodles into bowls and pour the hot broth with mushrooms, tofu, and bok choy over them.
  8. Top with sliced green onions, a sprinkle of sesame seeds, a nori sheet, and the soft-boiled egg if using.
  9. Enjoy your delicious and nourishing vegan ramen!
